\nAfter rolling out pie crusts for the last forty years, I still roll with the intent of making the perfectly round crust. I have never acheived it but it doesn’t ever stop me from trying. It is something that is with me every day in baking. Every time I manufacture a product there are so many variables that I come into contact with. Repetition and more repetition. Having realistic expectations is one of the gifts that brings a smile to my face today. I think the key is to fall in love with the process and all that is attached to it that makes the long journey interesting. It’s how I’ve stayed in love with baking after 46 years. I still get excited when I have one of those special days. You know, when everything kind of falls into place and nothing can go wrong.
\n\tThis is the attitude that I bring with me to dice control. I know I’m a beginner with the dice, but not with life. I love the little tidbits I glean from the posts, as well as all of the different personalities and talents that I met at the class in October. I now have a toss. I have a direction to take with the dice. I see the progress as the dice are now more consistently on axis. There’s no free lunch; there’s little bits and pieces. There’s connecting with others and the sharing of a joy for the game. I keep my expectations in line and real. I practice and let go of the outcome. I pay close attention and yet try not to out-think the dice.
\n\t"Trust the toss" as Dom would often say. Be thankful for the nuggets that life throws you. Connect with the dice and at the same time connect with yourself as well as others. Be thankful. Happy holidays, The DoughBoy<\/p>\n
