We have played at one out on the Boulder HWY in Vegas many years ago. All I really know is that you can throw out the GTC principles of betting, as it is a short run experience. Most players are betting the prop bets and if one hits they get a bit payday. One time a player with only $200 left but it on the 12 and the last roll of the session was 12 so he won big time.
Each player gets about $2500 in non negotiable chips. Most that I have seen they are free as there is no entry fee. You are assigned a position at the table starting from the dealer dealing to the players on stick right. So your chances of getting a position at SR or SL are 1 in 14. Chances you will not roll the dice in a given session. Good luck on that.
Only 10 players get to roll the dice about Each player gets to roll a max of 20 times but if a 7 out occurs he is done and the next player gets his turn. After the 10th man makes his 20th roll chips (or has a 7 out) the chips are counted. After the 3 sessions are completed, the player who has the most money in non negotiable chips from all 3 sessions is the winner. They casino usually pays 10 positions. Each "winner" after the first 3 players (who are paid in cash) get some free slot play.
The casinos generally have 3 tables going at one time with about 14 players at each table with three sessions. One session at 10 am, one at about 2 or 2:30 pm and the third around 6 pm. Then a get together around 8 pm where the winners get what ever they win.
Although we don’t go out of our way to play in a craps tournament, they can be fun. So if you are offered a free offer to play in craps tournament have a go at it.

The one that I use to attend lasted 2 days and you had 3 sessions of play and may never get to roll the dice .

Remembered that you were just asking about Craps Tournaments. Just saw this ad for a 2019 Craps tourney but it says annual so probably one again in 2020. Note that I am not endorsing this tourney. I only know what the ad said. Here is the info.

Maybe you may get it .It is Jan. 20- 22 .
They were a little confused do to the fact that play was at one casino and stay at another .
